Operator error. I had changed accidentally the FMS files to Notepad in order to read it. Now every time I generate a new flight plan through Simbrief, and select X-plane 11 to store it in the output flie, it turns into a Notpad.

The Notepad icon should not prevent the file from being imported into X-Plane. It simply means that if you double-click the file, it will open it immediately in Notepad (instead of asking you what program to open it in). But it should still work in X-Plane as well.
There are ways to remove file associations in Windows, but it can be tricky. This video demonstrates one way to do it, though I haven’t tested this method myself: Remove File Type Associations to Default / None in Windows 10 - YouTube .
Again, you do not need to do this if you don’t want to. The file should still work in X-Plane, even with the Notepad icon.
