I see the chart EGHI - NDB DME RWY 20 chart is different between the iPad and desktop versions. Why would this be? The iPad only has a Cat C only version but the desktop Charts app shows a similar chart supporting Cat A, B and C.

Welcome.
In Settings , top right icon, Chart mode Standard IFR gives Cat A, B, & C whilst Chart mode CAO gives Cat C.
You have Chart mode set differently for Charts Desktop and Charts iOS. You will need to unload/exit and restart app to make any change effective.

Interestingly, both iPad and Desktop were set to ICAO.
I set the iPad to IFR and restarted and it is all good now.
