The OFP Summary contains information I’d like to send to my 48 character Thermal Pedestal Printer. Is it possible to have a user defined OFP of data specific to my requirements. Or OFP Summary User defined layout that can be parsed to a notepad.txt file.

There is currently no way to define your own OFP layout on SimBrief.
But you might want to check out the “Leonardo MD80 (ACARS)” format in the Flightplan Downloads section. The first part of that .txt file contains a 24 character OFP summary, which might be useful for you.
