I would like to know if it is possible to create a flight plan excluding countries?
For example today the overflight of Ukraine and other countries at war are prohibited, so for certain flights can we create a route that circumvents the countries?
If so, can you explain to me? if not can you implement the functionality?

In Route Finder you can type Airways/Fixes/SIDs/STARs/FIRs to be avoided. Unfortunately, for me this option is not working. I put the names of the closed/restricted FIRs and Route Finder is still planning routes through such airspace.
Anyone else can relate?

Yes please. It would be good to select artcc to avoid when creating a route.
I have got the same issues. I tried to enter two FIR names in the Avoid Airways/Fixes/SIDs/STARs/FIRs field seperated by spaces and the routing still went through one of the listed FIR. The function seems to be a bit bugged at the moment.
