The troube is: When i plan a flight, specially for the C208B. The fpl with 50nm or 600nm The simbrief plan the payload an fuel FULL. 8750LBS EVERYTIME!!! Thats boring man… How i can configure that?

You have set your custom airframe to a maximum of 14 passengers. Even with 7 passengers on board (50% randomized load) you are likely to reach the MTOW for most flights when you add the required fuel.
I recommend reducing the “Max Passengers” option in your custom airframe. This will offset the randomizer so it selects a lower value at random. A “Max Passengers” value of 7 or 8 should result in MTOW if the randomizer chooses a full load, and a value less than MTOW at lower loads.
You can also reduce the passenger and baggage weights so that each passenger weighs less (for example, 55 lbs of baggage per passenger might be a bit too much for a C208).
