so when letting simbrief do random loads, i notice a lot of the time i end up with considerably more empty seats than i would expect (sometimes like half). IRL, i cant even remember the last flight i was on that wasnt completely full or very close to it. according to some quick googling, in the US, airlines are running like 87% overall.
would it be possible to have some adjustable variable where we can weight an airline towards more consistently full, or more random, etc. ?
I think you might have just gotten a bit unlucky, I just generated 10 flights and got the following loads (A321 with 191 seats):

Averages out to 171, which is an 89% load factor.
Maybe we can offer a setting to tweak the randomizer at some point, I’ll make a note.

This might be a good idea, as the 89% average is actually not realistic for business jet operations, so a way to skew such airframes towards fewer passengers would be nice.
