Why when only 1h12 into a 2h30 flight does the plan instruct me to reduce my FL to FL230 ??
Quite simply the route you have chosen to use is utilizing low level airways instead of Free Route Airspace.
Select a more suitable routing if required.
It also helps to post the complete routing rather than an extract.

Just to add, for what it’s worth, your flight was planned before we released the real-world European routes update on Thursday.
Now that this feature is released, the default real-world route for this city pair (EGFF-LPFR) is much better and doesn’t have this issue.
