I I have just got a new iPad and have installed the app on. However the maps are all white whereas on my old iPad they are coloured and show terrain etc. I can’t find the option to turn this back on / change the maps?

Maybe you have figured it out by now, but the white map you see in your second screenshot is the expected view when you have the IFR preset selected (top button in the menu to the left).
The difference likely comes from you manually editing the preset on your previous iPad. To do this, you need to enter “Edit mode” and select the “Terrain” base layer:
