Over the past week or so with MSFS 2024, the desktop app has severely lagged in updating my current position on the map. Then it will catch up, work fine for a while, and then start lagging again. I checked the Simlink Status app, and while the simulator is consistently updating my position, the Server section remains stuck in place.

This is likely a connection issue with your system.
Please look at what has changed since this was working normally, e.g., Windows updates, antivirus updates, router updates, new software etc.
Try restarting your router, disconnect from any VPN, disable antivirus and firewall as a test, check that your Windows time is synced to local real time, and connect to the internet via a mobile hotspot.
If no joy, please upload the latest logs from %appdata%\Navigraph\Simlink\logs\
