I created a flight from LIML to EDDM, 290 miles. Simbrief gave me a cruise altitude of FL 180. I’m wondering why such a low altitude for this distance? Also, when I open the flight plan in Charts it usually lists the Airport Charts, SID and STAR at the bottom so I can easily open them. It isn’t doing that anymore. I don’t know if I accidentally disabled it or what?

Most likely you had a step climb, for example:
FL STEPS LIML/0180/IVKAL/0240
…might appear in your briefing, just below the alternate airport’s ICAO identifier if you are using the default layout (“LIDO”).
Milan → Munich is restricted to FL240 by eurocontrol (rule LS4128):
Also, the typical LIML EDDM
route is about 225 nautical miles without SID/STAR; it’s only 290 tracks miles or so due to the super-long STAR procedure into Munich, for which you would probably get a shortcut in most circumstances.
